You get the health benefits of oats - they help you feel full, they are a good source of fibre, they may lower blood sugar levels and they contain important vitamins, minerals and antioxidants - in a different, palate-pleasing, almost dessert-like format.

In a smaller bowl, whisk together a flax "egg," oat milk (or your favourite non-dairy milk), vanilla and melted vegan margarine. Stir the wet mix into dry ingredients until combined, and fold in apple chunks.

Healthy Baked Apple and Cinnamon Oatmeal With Cosmic Crisp Apples (Vegan)
2 cups old-fashioned/large flake oats
½ cup coconut sugar
¼ cup chopped pecans + more for topping (if desired)
¼ cup raisins
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
1 flax “egg” (mix 1 tablespoon ground flax and 2 tablespoons water and allow to gel for at least 5 minutes)
2 ¼ cuts oat milk (or other non-dairy milk)
2 teaspoons vanilla
3 tablespoons vegan margarine, melted
2 Cosmic Crisp Washington Apples, diced
Preheat the oven to 350°F. Grease a 7” x 10” (or 8” x 8”) baking dish.
In a large bowl, combine oats, sugar, pecans, raisins, baking powder, cinnamon and salt.
In a medium bowl, whisk together flax egg, milk, vanilla and melted margarine. Stir into dry ingredients until combined. Fold in half of apple chunks.
Turn the mixture into baking dish and smooth it out. Spread remaining apple chunks on top. Sprinkle on more pecan pieces, if desired.
Bake for about 40 to 45 minutes, until golden brown and firm to the touch.
This sounds delicious. I'm not a fan of "mushy" cooked oats. Love overnight oats. This casserole sounds perfect. Will have to give those Cosmic Crisp apples a try too.
