Everybody needs a go-to recipe to make simple, creamy, dreamy guacamole. This is mine. This guacamole is fast and easy to make and it takes just four ingredients (not counting salt and pepper). My kids love it. They actually fought over this very bowl of delicious, healthy guacamole pictured. Perhaps I should have doubled the quantity? This recipe makes enough for two to four people to enjoy as a snack, but I definitely suggesting doubling it up to serve at a gathering (or for hungry teens just getting home from school!). The recipe is naturally plant-based, vegan and gluten-free.

Serve this healthy guacamole with mini cucumber slices, carrots, celery, bell peppers or whatever vegetables you have in your kitchen. Obviously guacamole works well with tortilla chips too. You can also smear it liberally on toast, put a dollop on top of your favourite vegetarian chili or mix it into salad greens or kale for a creamy dressing.

Because guacamole is mainly made up of the flesh of fresh avocados, it harnesses the potential health benefits of avocados. These nutrient-packed fruits (avocados are actually berries!) are said to have more potassium than bananas, antioxidants that may protect your eyes (among other benefits), plenty of vitamins and fibre. A healthy treat!

For this easy guacamole recipe, you will also need garlic powder, freshly squeezed lemon juice and canned chopped green chilies (for a little zing). I like to add fresh, chopped tomato on top as well but that is completely optional.

Making guacamole could not be simpler - just cut the avocados in half, squeeze the flesh into a bowl (discard pits) and mash together with the garlic powder and lemon juice. Then stir in green chilies, salt and pepper. You'll have fresh guacamole on the table in 5 minutes! Guacamole makes for the perfect party food. Enjoy it as an appetizer by pool- or ocean-side. Share it with friends and family or eat a bowl of guacamole by yourself while binge-watching the latest Netflix show.

Ingredients (2-4 servings)
  • 2 small to medium avocados
  • ½ tsp garlic powder
  • 2 tsp freshly squeezed lemon juice
  • 1 tablespoon canned chopped green chilies
  • ¼ tsp salt
  • pepper to taste
  • diced tomatoes (optional)
Instructions

Cut avocados in half. Squeeze flesh into a small bowl, discarding pits.

Add garlic powder and lemon juice. Mash together until few lumps remain. Stir in green chilies, salt and pepper.

Top with diced tomatoes, if desired.
