It's unanimous! The votes are in and everybody loves these No-Bake Vegan Pep-in-Your-Step Bites. And by everybody, I mean my daughter, her friend and my son. That last vote is a significant one, because that boy isn't fond of anything on the healthy side. In fact he would prefer that all his meals come from Taco Bell.
These protein bites benefit from the winning combination of peanut butter and chocolate chips. From there, add in healthy favourites like oats, ground flax, almond meal and unsweetened shredded coconut. Sweetened with agave and flavoured further with a teaspoon of vanilla extract, these bite-size treats are healthy enough for a pre- or post-workout pick-me-up. They are also perfect for an afternoon snack - about 3 p.m. when those sugar cravings hit!
I would consider doubling the recipe if you'll end up having to share. With three kids sampling on the day I made this batch, they were gone in a few hours. Not that I'm blaming the kids. I had a few more than I should have!
Use whatever peanut butter you prefer. If you favour a natural variety, you might want to add a pinch of sea salt to the mix. Both salty and sweet, these gluten-free energy bites are sure to put some pep in your step.
No-Bake Vegan Pep-in-Your-Step Bites

Ingredients (15 small bites)
- 3/4 cup (gluten-free) quick oats
- 1/2 cup almond meal
- 1/4 cup unsweetened shredded coconut
- 2 Tbsp ground flax
- 1/4 cup peanut butter
- 1/4 cup agave nectar
- 1 tsp vanilla
- 1/4 cup chocolate chips
Instructions
Stir all ingredients together in a medium size bowl.
Form mix into 1-inch balls by rolling in your hands. Place rolled bites on a plate or cookie sheet lined with wax paper. Put in freezer for about 30 minutes. Enjoy!
Store any leftovers in a freezer bag or plastic container and eat straight out of the freezer!
