Anyway, my last-minute tasks mean I didn't snap many food photos at all this week, so I'm just sharing a look at everything I ate yesterday. I went to the health food store after I dropped the kids off at school in the morning. I hadn't eaten anything, and you know what they say - don't go grocery shopping while you're hungry! Needless to say, I bought lots of stuff, including Gardein breakfast sandwiches. I've been wanting to try them for a while, but they are pricey and you know how groceries add up. But I needed a quick breakfast yesterday, so there you are. The sandwich (complete with vegan patty and vegan cheese slice) was pretty great for a quick breakfast. The patty is a little more spiced than I would like though.
I also picked up this almond butter crispy bar at the health food store. I was munching on it in the car and then I finished it off at home after I ate the breakfast sandwich.
At lunch, I had leftover rotini that my husband had mixed with a peanut sauce, edamame and carrot slivers the night before.
I made quick tofu "pizza" on French bread for dinner, with a salad of chickpeas, walnuts, tomatoes, raisins, olive oil, lemon juice, salt, pepper and parsley. Both recipes come from Raising Vegetarian Children.
I also ate a Go Max Go Twilight vegan candy bar late in the evening. I'm not gonna lie. It wasn't the healthiest day of eats. Some greens would have been good, but I'm preoccupied with Christmas tasks.
How is your holiday planning going?
I adore breakfast sandwiches-- anything I can eat as I'm doing something else is good by my standards, and add breakfasty goodness and I'm in heaven!
ReplyDeleteI don't have much experience with breakfast sandwiches, but I definitely see the appeal. I'm getting tired of toast and cereal!
