What I Ate Wednesday


As I said on Instagram, working from home has a number of benefits, one of the most important being I can break to make pancakes or French toast at any time if I so choose. Not that I do it often. But one day this past week I did in fact break to make delicious vegan Coconut French Toast from a recipe in Isa Does It. It's so simple and the coconut makes it absolutely scrumptious. I could have this for dinner, it's so good!


I also made Sesame Tofu from Isa Does It this week. I used my new grill pan for the first time and I enjoyed the stripey effect it created. The tofu was a little on the plain side. It could have used a nice sauce. I served it with rice and broccoli.


I made vegan macaroni and cheese from Chloe's Kitchen one night for dinner. My husband and I quite liked it, but the kids weren't sold on it.


My husband made rotini with tomato sauce on the weekend. He put peas in the sauce for a wee nice change.


Now for Tuesday's day of meals. My son was home sick with a sore throat so I made smoothies for the two of us. I used frozen mango, pineapple and strawberries mixed with orange juice and water.


We were still hungry a little while later, so we had naan bread warmed up and spread with hummus.


For lunch we had leftover Chickpea-Rice Soup that I made from a recipe in Isa Does It. We didn't have any of the cabbage called for, but it was still tasty. It's super easy to make - a great one for those days when you don't have much in the fridge or cupboard. Actually it's very similar to my recipe for chickpea and rice soup.


I wasn't feeling very motivated at dinnertime, so we had dinner basically out of bags - some Gardein chick'n nuggets, sweet potato fries and a few curly fries. Plus salad on the side. Not the healthiest of meals, but fairly yummy. Quickness was called for, as the little one had dance class to get to and her brother had basketball try-outs (yes, after he stayed home from school sick!).

  1. I had coconut French Toast in a restaurant a while back and it was delicious! Your version is probably even better!!!

  2. I've been hankering to try some vegan French toast for a while now. I make Shawn normal French toast with eggs and I've been a bit jealous!

  3. So many great recipes from Isa! That french toast looks to-die-for. I'm vegetarian and I just attempted my first vegan "cheddar" cheese and it was good but I can see why kids might not be as keen. It just doesn't taste the same as the real deal, unfortunately!

    1. I have just scratched the surface of Isa Does It, but so far I'm loving it! The vegan cheeses are definitely an acquired taste. The only one I like so far is Daiya. :)

  5. Oooh I love sneaking peas into tomato sauce! It is the only way to get my kids to eat peas. I adore peas, but apparently they didn't inherent the pea gene lol.
    And huzzah for the Italians out there!
