What I Ate Wednesday


As I said in last week's What I Ate Wednesday post, I am trying to be on my best eating behaviour lately. I want to eliminate any painful IBS symptoms. While I am avoiding refined sugar as much as possible, I am certainly not cutting out maple syrup. For some reason I just can't get enough pancakes this week!

My son stayed home from school last Friday because he was developing a cough. So I whipped up some vegan blueberry pancakes from Chloe's Kitchen for the two of us. The ingredients are so simple and yet the recipe produces surprisingly delicious pancakes.


I also made us strawberry, banana, orange juice smoothies. Those are my little man's favourite - he likes the pink, sweet smoothies. And who doesn't?


I have sooo many cookbooks that many of them often get ignored. I find that my meals for the week are better organized if I focus on one or two cookbooks per week. This week, like last week, I focused on The Oh She Glows Cookbook, as well as Chloe's Kitchen. Both of these vegan cookbooks offer my favourite kind of recipes - simple, yet unique enough to make a satisfying and attractive meal. I made this "Luxurious Tomato-Basil Pasta" from The Oh She Glows Cookbook one night.


And this easy "Empowered Noodle Bowl" with Thai peanut sauce from The Oh She Glows Cookbook another nightI was missing plenty of the ingredients you're supposed to put in, like edamame and green onions, but it was still yummy.


I made the "Peanut Butter Cookie Dough Bites" from Oh She Glows too - twice! They are a satisfying yet healthy little treat. I have been munching on two (or three!) each night when I sit down to relax after the kids go to bed. (The kids love them too!)


These little peanut butter treats - "Buckeyes" from Chloe's Kitchen - are a bit more decadent. They have icing sugar/powdered sugar in them and they are dipped in melted chocolate chips. I made them one night when my sister-in-law and her family came over. Only problem is I didn't read through the recipe to notice that there are a couple of freezing periods involved. We had to wait all evening for them. But they were gooood!


After being (relatively) good all week, the family and I headed to a Mexican restaurant on the weekend. That's when this drink happened - a Mexican Bulldog Strawberry Margarita (with a Coronita). I couldn't resist. But I shared it with my husband, so that's not so bad, right?


I also had a delicious vegan mushroom and rice burrito. Yummy. And who cares about the little side salad really? I forced myself to eat it though.

  1. Had to laugh about the side salad, sometimes they're just so tokenistic! I had quite a few eat out meals last week but haven't had a chance to sit down and blog about them. Hope your son is feeling better!

      I have big time food ruts. That's why I need to keep looking at cookbooks. :)
