What I Ate Wednesday


Happy Wednesday! We are staring down another snow day here. School buses are cancelled and the kids' school ski trip has been postponed (ironic that more snow equals no ski trip, huh?) My daughter asked to be driven to school (she would rather be with her friends). My son, on the other hand, is all set for a day off. He has promised not to spend the day playing video games...but we shall see.

Last What I Ate Wednesday was all about decadent treats like sushi and pizza. This week I have been a good girl. With my youngest child being 9 years old, I think maybe it's time to say goodbye to my muffin top. 

And speaking of muffins, I made banana chocolate chip muffins (with chocolate rice milk) for breakfast yesterday. I wanted to have one today, but the kids have eaten the rest of them!


Another day I had a big bowl of fruit topped with flax granola for breakfast.


I met a nice woman at the grocery store who trains athletes. She suggested that bananas with nut butter make a good pre-workout snack. So I had that for breakfast one day (minus the workout).


I was hungry about an hour later and so I followed it up with an orange and some veggie "bacon."


Instead of chocolates and cookies, I have been snacking on apple chips, dried apricots and pumpkin seed clusters.


And, of course, fruit. Blood oranges are my favourite fruit right now.


I also stocked up on Larabars at Costco for a healthy grab and go snack.


In terms of lunches and dinners, I enjoyed this minestrone soup my husband made on Sunday. We got a bunch of sliced baby bella mushrooms at Costco and he sauteed some to put on top of a mixed greens salad.


Another day's lunch was my fave recipe, lentils and rice, left over from the night before. I paired it with chocolate rice milk for a chocolatey taste without the chocolate.


Monday's dinner was vegetarian chili with hemp hearts (served over quinoa). It's definitely chili weather!

  1. Yum! The veg chili looks really good. I really must get back in to eating quinoa. I'm not crazy about so I keep putting it aside for 'another day'. To get control over my expanding belly I like to make a lot of green juices or smoothies. Let's see if they do the trick!

    1. I used to avoid quinoa because you had to rinse it so much. But now the packaged ones seem to cook up easily (no rinsing) just like rice, so we have been using it more. Yes, I really should try to fill up on juices and smoothies more often!

  5. Veggie chili with hemp hearts? Sounds (delicious) interesting!

    Okay- not gonna lie... I can do a lot of things but not sure veggie bacon is one of them. :(
