I've said it before - summer meals should be light and easy. Too often we get into a dinnertime rut around here. When we can't think what else to make, we inevitably go for pasta and tomato sauce. A classic standby, but it doesn't exactly scream summer. In fact, my son recently told me he can't stand pasta anymore. Let's not get crazy now kid - you're half Italian! There's always room for pasta.
For a more exciting summer meal that the kids always love, though, we go Mexican. I have often written about how much my kids enjoy Taco Tuesdays. The beauty of Taco Tuesdays is that you can put all sorts of foods out on the table and the whole family can dig in and take whatever they please.
We generally start with an Old El Paso hard and soft taco dinner kit. My daughter only likes the soft tacos. The rest of us like both kinds. We also put out heated refried beans, taco sauce, salsa, cheese, vegan cheese, lettuce, diced tomatoes, fried veggies and, of course, guacamole.
My husband is the guacamole-maker in this house. He normally whips it up quickly, adding the ingredients by eye. For our last taco dinner, I asked him to measure his ingredients so that I could share the recipe with you. This is an easy recipe that you can prepare in minutes as long as you have avocados that are ripe and ready.
While avocados are packed with fat and calories, they are well worth it in my opinion. When my kids were toddlers I often gave them slices of avocado to munch on for snacks. Avocados are full of nutrients and heart-healthy compounds. Read five surprising health benefits of eating avocados here.
I love to add guacamole to my tacos. I also throw some on top of my quesadilla wedges and tortilla chips. This is a basic guacamole recipe that should appeal to most people. If you want to jazz it up, you could add some heat with a pinch of cayenne pepper or stir in diced tomatoes or salsa.
Once the taco fixings and the guacamole are on the table, all we need is a margarita for me and maybe a cerveza for the husband and we are good to go!

Easy Guacamole in Minutes

Ingredients
- 2 avocados, peeled and pitted
- 1 Tbsp olive oil
- 1/2 tsp minced garlic or garlic powder
- 2 tsp of freshly squeezed lemon juice
- salt and pepper to taste
Instructions
In a medium bowl, mash the avocados with a fork. Stir in the other ingredients. Enjoy!

I LOVE avocados, especially in guacamole. But diced tomatoes, onions and cilantro are a must for me!

ReplyDeleteI have such great memories of being a kid and doing Taco nights, so much fun to be able to make your own. We never had guacamole back then but I eat it all the time now, so good!!
