Today promises to be another scorcher. There won't be a whole lot of cooking going on around here. This week's menu plan calls for falafel sandwiches with vegan raw tzatziki sauce today. Cooking will be minimal.
Monday on the menu plan called for rapini pizza and that is indeed what I ate. We also served pasta left over from Sunday. I made a tomato sauce with peas and navy beans. My husband and I enjoyed it quite a bit, but the kids prefer their sauce plain.
Now for Tuesday's eats. I have been driving my son and his friend to basketball camp this week. I'm not very hungry when it's time to go in the morning, so I have been grabbing these Taste of Nature organic snack bars on my way out the door. They are vegan, gluten-free and non-GMO. The California Almond Valley bar, pictured above, is made from almonds, raisins, sesame seeds, agave nectar, sunflower seeds, brown rice syrup, pumpkin seeds and whole grain brown rice crisps. Simple, natural and tasty. We buy large boxes of these at Costco.
Lunch was, of course, leftover rapini pizza. Yum. And watermelon chunks.
My weekly menu plan called for tacos on Tuesday. It turned out that both of the kids were at friends' houses at dinner time, though, so my husband suggested we get takeout. We opted for chickpea and potato roti. It was delicious. We also had a cucumber and tomato salad with olive oil and balsamic vinegar.
I ate some jelly beans in the evening while watching old episodes of "Pretty Little Liars." I feel I'm too old to watch that show, but I'm addicted.

ReplyDeleteThanks! I don't usually go for plastic tablecloths, but I thought the pattern was pretty. My dog has been trying to steal food, and she's leaving holes in the tablecloth!
DeleteFor the rapini pizza, we boil rapini and then saute it in garlic and olive oil and put it on top of the pizza before cooking.
Is it wrong that I am already tired of the heat? Seriously-- we've been roasting! Love the nummies as always & so inspired!
