One great thing about having a party is party leftovers. We had friends over for our "A Turtle's Tale 2" preview party on Saturday. Although we had clean-up duties on Sunday, we also got a break from cooking. We ate leftovers like lentils and rice and chickpea salad, above.
On Monday, we were still munching on leftover salad. My husband also made quesadillas using black beans and Daiya vegan mozzarella shreds.
On Tuesday, I didn`t feel like eating the usual toast for breakfast. I was kind of naughty, starting the day with my favourite vegan banana chocolate chip bread.
For Tuesday lunch, I had more quesadillas, leftover corn pasta with tomato sauce and grapes, watermelon and pineapple. Love that fresh fruit!
Dinner was an impromptu Taco Tuesday, with soft tortillas, hard tacos, black beans, refried beans, guacamole and salsa. We also had oven fries and salad.

ReplyDeleteI am also a baker for parties - so leftovers usually mean having something sweet in the house which is not a norm for me.. so yes, I can't complain about that :-D
I agree - I love a platter of veggies that I don't have to cut up - and fruit too!

DeleteI'm always happy with leftovers! Reheating isn't a problem even though I no longer own a microwave. In fact stove reheating is better, it never alters the texture.

DeleteI use the stove most often to reheat, but we do have a microwave in the basement. I actually think they are horrible, but sometimes it's too convenient. ;)
Some of my favorite meals are made of leftovers, and not just because it means I don't have to cook or prepare anything new. Quite a few dishes really do get better with age! In my opinion, the best is Indian food. The spices just seem to meld and become more complex with a bit of time to chill out. To be perfectly honest, I tend to eat it cold, straight out of the fridge, too.
