Menu Plan, 12/52


Happy St. Patrick's Day and Happy Anniversary to my sister and her husband! We celebrated well into the night in Clearwater Beach, Florida two years ago on this day.

On to the menu planning. Last week's menu plan was what my son would call an "epic fail." We were away from home Sunday to Wednesday, but that didn't really cause the plan to fail. I had accounted for our absence in the plan.

We did indeed have Indian food on Monday as planned. On Tuesday, we ate veggie burgers at Harvey's. (They have the best veggie burgers.)

We did get home on Wednesday, as planned, but it was about 6:00 p.m. I like to eat early, so I completely forgot about my menu plan and whipped together some rice noodles with a stir-fry made from frozen veggies, tamari and hoisin sauce.

On Thursday, I asked my husband to make the scheduled sweet potato curry (which is actually a roti filling) but it is a potato sweet potato curry and we didn't have any potatoes. So, he decided to make pasta and tomato sauce, which was supposed to be Saturday's dinner.

On Friday, we were going to have veggie burgers, but we still didn't have any groceries (including veggie burgers). I ate leftover vegetarian chili (pictured above) that I had frozen the week before. The family had quesadillas.

On Saturday, we ordered in Chinese food. Not the best choice when you have picked up a stomach virus, but I downed it anyway.

That brings us to today. I don't feel much like eating or cooking. But eat we must. I have tofu baking in a teriyaki sauce in the oven. I'll serve it with roasted potatoes and salad.

Maybe the point of all this is NOT to make a menu plan when you're going to be away half the week.

Anyway, we are back at home this week, so this plan should go well. I am repeating a couple of the items that we didn't get to last week.

  2. Oh yes, we have those weeks! It's definitely tough when you travel. I love that there are chickpeas in your veggie chili, looks so good!

  3. Just back from the Houston Rodeo and Livestock show with the kids. It's the thing to do here but it seemed like a giant propaganda machine to use and eat animals to me. Only vegetables and fruit will be harmed on my menu plan this week...

  4. Your vegetarian chili looks delicious. We had some of our version of the same on Friday. I love the stuff!

    Will have to try Harvey's Veggie burger, as I am a fan of a good one! If you guys ever find yourselves hungry in the 'hood of Queen West, west of Univerisity, I recommend you pop into The Rex for theirs. It's a real favourite, plus the place is very interesting.

  8. I haven't had Chinese food in ages but now I am really craving it, I get in those moments a lot though lol The vegan broc burritos sound super good, as always a great weekly meal plan!

  10. I menu plan each week also, I have to helps keep me organized. Especially because I am vegetarian and my spouse is not. I cook differently.
