Before I get to my meal plan for this week, I would like to do a little look back at last week's planned dinners and how they turned out. Thanks for visiting and acting as my conscience. It forces me to stick to the plan!
As I told you, Monday's meal featured Hannah Kaminsky's Coconut Vodka Sauce. I am a big fan of this sauce. I eat it like I would chocolate...quickly and in large amounts. I'm not kidding. I just love this sauce. It uses coconut milk in place of cream and only a few simple ingredients, including vodka. I admit I sampled the vodka while I was cooking it too. That's a bonus right there.
The pasta is quite yellow in colour because it's gluten-free corn pasta. It sounds odd, but I actually quite like it.
On Tuesday, we had Simply Sweet Tofu, carrot soup and mashed potatoes (with vegan margarine and soy milk). The kids ate huge quantities of mashed potatoes. It was a nice, satisfying dinner for a cold day.
Wednesday's dinner was Spicy Eggplant and Tofu (above) served on rice. It turned out a little hotter than I had planned, but my husband likes the heat so it worked out well for him. I peeled the eggplant, salted it and steamed it, so it wasn't at all tough. It turned a bit saucy in fact, making it a nice soft contrast to the extra-firm tofu.
Our Thursday recipe came from "Meatless," a cookbook from the talented people at Martha Stewart Living. Here's my attempt at making the Pea and Potato curry, above.
On Friday, we ordered a platter of vegetarian sushi and some fried rice. It was so good. I could eat it daily.
My husband made an amazingly delicious Roasted Fall Vegetables and Lentil Salad on Saturday. It's also from "Meatless." Read on for more about this beautiful vegetarian cookbook.
Today, on Sunday "Husband Cooking" day, my husband is off to a Super Bowl party, so I am re-heating the leftover coconut sauce that I froze on Monday. Plus, I threw some veggies into the oven to roast.
