With all the effort that goes into holiday meals, sometimes we just feel like slacking off the rest of the days, don't we? Well, I do.
This What I Ate Wednesday, I have a few meals from the last week to share, but not many, because I just didn't make much or take many photos. I have spent a lot of time in pajamas.
Above, on Saturday I put together a lunch from whatever groceries were left in the fridge. I boiled a sweet potato and some regular potatoes and made a mash. I baked tofu in teriyaki sauce. I used leftover pesto on pasta. We had rapini and roasted veggies left from the day before. Finally, I boiled some carrot slices. I quite enjoyed the mishmash of tasty stuff.
For Christmas, the family gave me another owl mug to replace the one that sits broken, waiting for repair, on my husband's work bench. My sister-in-law gave me green tea for our Keurig coffee brewer. I had that for breakfast one day along with my typical spelt bread toast with peanut butter and jam.
Last night, on New Year's Day, we enjoyed a simple meal of pasta with Yves veggie "meat" balls and salad.
My husband also roasted some potatoes. I always dip them in ketchup.

DeleteYay for pajama days! We are definitely going through the post-holiday low energy times out here too-- and lots of spaghetti-type standards {our creativity is also in a lull lol}.

DeleteYep, I definitely slacked on other meals. There were plenty of leftovers and it's just nice to step back from cooking. I'll get back on track tomorrow!

ReplyDeleteThanks Natalie. I have four owl mugs now, if you include the broken one. It reminds me of when I used to like Marilyn Monroe as a teen. People started giving me Marilyn stuff. :)

DeleteFor someone who didn't do much cooking this week, the few meals you did share look delicious. So much color, and I love the mishmash. I also understand the lack of energy. From Christmas until New Year's I barely made a thing or photographed a thing, yet somehow got by on the contents of my fridge.
