This What I Ate Wednesday, I am looking at all of the food I consumed on Tuesday.
Let's start with breakfast. I just went grocery shopping on Monday, which means there was still fresh fruit in the house. I enjoyed some Nature's Path pumpkin flax granola with peach slices, raspberries and soy milk. I also had water with Emergen-C in it. I have had a crackle in my throat for a few days, so I am trying to ward off any illness. I added a clementine for good measure.
Mid-morning, I made banana muffins with chocolate chips. This time I replaced 1/4 cup of the oats that I usually use with Hemp Hearts for added protein. In my cup is Van Houtte decaf coffee brewed in my Keurig machine. I don't generally drink coffee, but this coffee is tasty and easy to make and I have been drinking a cup almost every day. Call me wimpy, but I can feel the effects of the caffeine, even though it's decaf.
For lunch, I had spelt elbow noodles with leftover tomato sauce that my husband made on Sunday night.
For dinner, I made my favourite lentils and rice. I also had a taco with refried beans, salsa, tomatoes and taco sauce. And salad...pretty much my only veggie of the day.
Dessert is part of my programming. I ate these vegan chocolate chip cookies that I made from a recipe from How it All Vegan. You would never believe these cookies are vegan. And I used spelt flour to boot.

ReplyDeleteIt's hard to avoid illness when you have kids, isn't it? We rely on Emergen-C and then oregano oil for sore throats.
DeleteMmm, those cookies look so good. Do you use earth balance as "butter"? Now I'm craving chocolate chip cookies. :)
ReplyDeleteHi Laura, Yes, most of the time I do. Those cookies are a combo of oil and margarine.

I also have a similar life story (leaving corporate). I've done that twice now, and I hope to never have to go back again.
