What I Ate Wednesday, on the run edition


The past week has been a bit of a whirlwind, with a lot of short trips here and there. So, meals have been quick and baking has been minimal.

Here is my What I Ate Wednesday look at a few highlights. We had one of our summer staples again, tacos with refried beans. This time, we topped them with sautéed orange and yellow peppers, onions and mushrooms.



We changed up our refried beans, using these Trader Joe salsa style refried pinto beans that I picked up in Cape Cod. I was afraid to actually like them, because I really can't get any more. I do like them. Oh well, it's only a three hour drive from Toronto to Rochester (the nearest Trader Joe's). Somehow I don't think my husband is going to go for that.


I had also picked up this gluten free brownie mix at Trader Joe's. I made it this week, adding chocolate chips and dried cranberries to the mix.


I ran out of cooking spray, and used parchment paper instead. Unfortunately, the brownies stuck to the parchment paper all around the edges of the pan.


Luckily, I salvaged most of the mix. The brownies were yummy, without the aftertaste that some gluten-free products have.


During our travels this past weekend, I picked up some french fries at a chip wagon (not pictured) and then hit the grocery store for this tasty chickpea, carrot and bell pepper salad.


On our way home on Sunday, we stopped at my sister-in-law's place. She served a lovely lunch of simple, delicious foods, like this platter of cantaloupe slices, sundried tomatoes, olives and cheese.


She also put out slices of bread with olive oil, herbs, salt and fresh picked tomatoes. My favourite part was her homemade marinated eggplant. I am hoping to duplicate the recipe myself. She kind of wings it though, and I am a recipe kind of a gal.

I will have to move to Canada {but I'll bring Trader Joe's, so its all good right?} I adore cheese & fruit type platters {I could probably live off of cocktail party food lol}-- in all seriousness, you can get some of Trader Joe's foods online {do a google search & hit "shopping"}-- that might help!

  6. Everything looks delicious! I am 2 hours from the nearest Trader Joes, much to my dismay. I have to buy wine by the crates whenever we go so it will last ;)

  8. Mmmm, you're making me hungry! ;) I'll have to find those TJ's salsa beans. I love finding new things to obsess over from Trader Joe's. Sorry you don't have one closer!

  9. I'm so amazed with people who can just wing it! I am more of a recipe girl too, at least something to base it off of, and then I can be more creative from there. :) We just got a TJ's about an hour away, but even that feels like a drive... I hope to get there one of these days!
