Happy What I Ate Wednesday!
This week I am looking at a few of the food items I consumed since last WIAW.
This was not the best week for food around the homestead, I guess, because I didn’t snap a lot of photos! Either that, or we were just too busy chauffeuring the kids around to take pictures.
I think my favourite meal of the week came from an attempt to use up some of the meagre offerings that were left in our fridge before I went grocery shopping. So, I boiled a couple of organic sweet potatoes and roasted some asparagus in the oven. My husband made some gluten-free penne with olive oil, garlic, onions and portobello mushrooms. It was simple and delicious.

My son turned 10 this week! How old does that make me? I know, 40 is the new 20 and all that, but I just can’t help thinking I’m still supposed to be twenty-something for real.
Anyway, on his birthday (a school day) we had some vegan banana blueberry pancakes for breakfast. They look plain in this photo because I actually ate five of them and then remembered to take a photo. Since these two little ones were leftovers, I couldn’t dress them with Earth Balance margarine and maple syrup or agave nectar like we had the other ones.
My son loves sushi, so for his birthday dinner we ordered a platter of veg sushi, some vegetable fried rice, edamame and miso soup. The rest of the gang then had ice cream cake, but I don’t do dairy so that was out for me.
Yesterday, I enjoyed my favourite “lazy lunch” of tortilla chips with salsa, hummus and guacamole (all of the store-bought variety). Oh, and some grapes on the side.

ReplyDeleteHi Laura! Thanks! Yes, my husband and I are very happy that our boy also likes (okay loves) sushi. My daughter will eat cucumber rolls now, so that's a start. And she loves the fried rice.

DeleteEverything looks so yummy, but that penne looks deeeeelicious, and I don't even like mushrooms! I KNOW. I'm the worst vegetarian ever for not liking mushrooms :)
ReplyDeleteNo, Ruthie. Even a vegetarian can take a pass on a couple of veggies! ;) My kids hate mushrooms, but they don't like many vegetables anyway.

DeleteSome yummy meals you guys enjoyed. Tonight my cousin and I did a simple big salad with a very yummy sundried tomato bread... I loved it because at home I always feel as though I need to make a more substantial meal and this was light but perfect!
