After a very busy week of dance recitals, a family birthday and a school family fun night, the kids certainly welcomed the PA Day today. Actually, my son always welcomes a break from school, whatever the reason.
Anyway, I decided to celebrate their day off today with a special breakfast. Blueberry and banana pancakes are always a hit around here, so that became the centre of our shared meal.
Plus, these pancakes lend themselves nicely to a colour scheme of blue and yellow, and I just happen to have a lot of blue and yellow dishes.
For our main plates, as well as our cups and saucers, I brought out our wedding china, Wedgwood Mistral. Normally, the kids don’t get to use it, but today I thought what the heck. I also used some of the wonderful blue dishes my parents have given me.
I had picked some wild daisies in a field a couple of days ago. Love the look. The smell, not so much.
The kids and I shared a pot of decaf green tea and also enjoyed orange juice mixed with cranberry juice.
The banana gives these pancakes a lovely sweet flavour and they require few ingredients. Serve with maple syrup or agave nectar. They are based on a recipe from my bible for vegan cooking, How it All Vegan.
Blueberry Banana Pancakes
by
Ingredients (14 medium size pancakes)
- 1 cup light spelt flour (or regular flour if you prefer)
- 2 tsp baking powder
- 1 Tbsp sugar
- 1 banana
- 1 1/4 cups non-dairy millk
- 1 Tbsp ground flax
- 1/2 cup fresh or frozen blueberries
Instructions
In a large bowl, sift the flour and baking powder together.
Stir in sugar.
In a blender, blend the banana with the milk.
Stir the banana mixture into the dry ingredients.
Stir in the ground flax.
Gently fold in the blueberries.
Cook on a well oiled or sprayed griddle to ensure the pancakes don't stick. If you find the pancakes really sticky, add a bit more flour to thicken the remaining batter.

Looks delicious! I LOVE fruit pancakes! My husband is the pancake maker here, and I have to BEG him to put fruit inside. He's a so-called pancake purist :)

DeleteThis pattern is our wedding china, also. We kept it in boxes for the first 22 years of our marriage, and finally decided that was nuts, so we put the entire set into service for daily use just this week. It goes great with the blue dishes. Thanks for the great idea.
