Today, I am looking at everything that I ate on Monday, starting with my breakfast—quick cook steel cut oats with 1 Tbsp ground flax, 1 tsp agave nectar, fresh blueberries, raspberries and sliced bananas.
Here it is drowned in soy milk.I followed that up with 1 Tbsp of powdered psyllium husks in a glass of water (followed by another glass of water) to help with my digestive complaints.
My doctor says that IF I have irritable bowel syndrome, fibre is the way to go. I figured I already eat enough fibre, but the psyllium is actually helping.
You have to get a quick photo of this stuff. Otherwise, it solidifies to the point of undrinkable in a couple of minutes!
For a mid-morning snack, I had a mix of peanuts, almonds, walnuts, craisins and apricots.
Lunch was leftover rice pasta and tofu lasagna. My sister-in-law had a family gathering on the weekend and Nonna brought this delicious lasagna. I sent the kids to school with leftovers in a thermos too.
I added to the plate some purchased couscous salad and some rice chips with onion hummus. I have been avoiding regular wheat products as much as possible, but I bought the couscous salad for my family and I couldn’t resist.
I also couldn’t resist washing it down with a bubbly glass of Sprite!
Dinner was mostly frozen foods that I had purchased at King’s CafĂ© vegetarian restaurant—fried noodles, fried rice and tofu nuggets. We also had spring rolls purchased at Costco and some organic mixed greens salad with craisins, walnuts, olive oil and red wine vinegar.
For dessert, I had So Delicious (soy) Chocolate Peanut Butter ice cream with a gluten-free cookie and some organic chocolate syrup.

DeleteI really want that ice cream-- we don't usually keep it in the house because I have no self control, but it's hot- time for ice cream again! The tofu lasagna sounds really good, too. Do you do your steel cut oats in the crock pot, or are you patient enough to make them in the am?
ReplyDeleteHey Laura, These particular steel cut oats only take 5 minutes of boiling, so I make them in the morning. I have yet to try the crock pot oats. Sounds good.
