For this edition of What I Ate Wednesday, I am exploring some of my food choices over the past week.
Despite the warmer weather, I was clearly in the mood to bake.
I made a few old favourites, including these Scottish Scones. I ran out of white sugar though and had to use brown. I also had no shortening and used margarine instead. I found that the substitution made them shorter in height than usual. They weren’t as good, but they were still yummy.
I also made some Bold Berry Muffins for a post-breakfast snack one day. This time I used coconut milk yogurt instead of soy yogurt. I liked the slight coconut flavour.
The muffins were bursting with blueberries and raspberries. Tasty! And yes, I ate two of them.
I made my second batch of date squares in one week.
This time I got smart and put half of them in the freezer before my daughter could gradually pick the topping off the whole batch. They freeze nicely, and you can then take one out for a snack instead of eating two or three like I usually do.
Meals were quicker this week. You shouldn't spend your time cooking when it's nice outside! That's my excuse anyway.
For lunch one day, I whipped together some of Angela's delicious Creamy Avocado Pasta. So quick and tasty, and it requires only a few ingredients.
For dinner one night, I breaded some tofu with spelt bread crumbs, nutritional yeast and Cajun seasoning.
I fried the tofu in olive oil and served it with quinoa (cooked with vegetable broth) and broccoli.
For lunch one weekend day, I sautéed some frozen mixed veggies with leftover barbecued tofu and red peppers. I added some leftover cooked kamut udon noodles and some tamari for flavour, and voila, a healthy, delicious and very quick lunch.
