What I Ate Wednesday


Oddly enough, you can be a vegetarian and eat no vegetables at all. While that isn’t the case for me, I sometimes get lazy (especially at lunch) and don’t eat as many fruits and veggies as I should.

So, today I am participating in the Peas & Crayons What I Ate Wednesday party. This month, Jenn is focusing on serving an extra cup of vegetables every day. That’s a plan I can get behind.

Today, I am sharing a look at just a few of the foods I ate this past weekend. It’s not all veggies. You know I like a sweet treat!

On Saturday, I decided to use up the red chard we got in one of our organic produce deliveries. I often let leafy greens rot without using them, just because I don’t feel like washing them. I was glad I made the effort, because they were actually quite tasty, cooked with a little bit of minced garlic and olive oil.

I also made a veggie chili, from a recipe in How it All Vegan, one of my favourite cookbooks. We served it on some basmati rice.


On Sunday, I finally made some cookies that I had wanted to make for a long time. They are chef Michael Smith’s peanut butter and jelly cookies.

I am glad I got around to making them, because they are quite delicious. I love jam in a cookie or muffin.


My son prefers chocolate over jam, so I put some Nutella in a few for him. I still think jam is a better option, though.


My husband bought a new barbecue on the weekend, and we were anxious to try it out. So, on Sunday, he braved the cold weather to produce a nice, barbecued meal of sweet potatoes, asparagus, potatoes, peppers, mushrooms, zucchini and tofu. I’m glad I didn’t have to stand on the deck in the cold! I sure enjoyed the end result though.

  1. Mmm those cookies look delicious! I'd want one of each kind :) Those veggies and tofu look SO good! I LOVE grilled veggies. That's probably my favorite way to eat them.

  3. I used to have a problem with being lazy about greens- until I got a salad spinner! You should really consider getting one if you don't already, because you can wash the greens easily, dump out the water, and then dry them off with ease. Seriously, they're amazing.

    1. I have a salad spinner and I'm still lazy. :( What I do is focus on the entree and then I don't feel like making salad or kale or any greens. I'm going to reform myself though!

  8. holy yum! those roasted veggies look soo good!! and I am writing this after having a FEAST yesterday where I couldnt imagine myself eating anything ever again hahaha! (but seriously, who was I kidding hahaa)

    I am so excited for asparagus season to start! havent had any yet but cant wait to have it again...maybe with some sauce hollandaise ...???

  9. Man, that looks tasty. I am trying very hard to eat more veggies. We joined a farm share program so in about a month I'll be getting all sorts of locally grown veggies. I'm very exited. Just had some asparagus tonight that was de-licious!

    1. I have never been part of a farm share, but I have received organic produce deliveries, and I get really excited too. I love the surprise of receiving different fruits and veggies and figuring out how to use them. I look forward to seeing what you get (if you share it on your blog).

  10. Your barbeque plate looks delicious! I normally don't like barbeque food, but that looks like something that I could really enjoy. :) I also definitely know what you mean about vegetarians that don't eat vegetables (my sister's friend is one of those!) and while I do eat my veggies, I do sometimes not get as many as I should. It's more like the carbs take over sometimes. And greek yogurt! So addicting :P

    1. Thanks! We have been getting into the bbq now that we started doing more veg on it. I know what you are saying about the carbs. They can be more tempting. I fill up on pasta and then skip my salad. ;)
