Weeknights are tough. You're tired from working or taking care of kids, or both. You want to serve your family a healthy meal, but you lack the time, the energy and maybe the motivation. That's where these little vegan chickpea patties come in. If you have bread crumbs on hand (I keep some in the freezer), these tasty, nutritious chickpea burgers will take you just 5 or 10 minutes to whip together and about 15 minutes to cook.
While the chickpea patties are frying, you can toss together a green salad and boil some potatoes (to fork-mash with a little olive oil and salt) and you have an easy, tasty, healthy weeknight meal. You can simply dip the chickpea patties in ketchup (to please the kiddos) or serve them with this simple vegan gravy.
This chickpea burger recipe requires that you simply throw the whole can of chickpeas (including their liquid) into a blender with the garlic. Blend it up, scrape it into a bowl and add bread crumbs, quick oats, nutritional yeast, salt and pepper. Give the mixture a quick stir, form about 8 small patties in your hands and cook them in olive oil for about 15 minutes. Easy peasy.

Easy Chickpea Patties

Ingredients (8 small patties)
- 1 15-oz can chickpeas, with their liquid
- 1 clove garlic
- 1 cup quick oats
- 1/4 cup bread crumbs
- 1/2 Tbsp nutritional yeast
- 1/2 tsp salt
- black pepper, to taste
- 3 Tbsp olive oil
Instructions
In a blender, blend together chickpeas and their liquid with garlic until smooth.
Transfer mixture to a large bowl. Stir in remaining ingredients (except olive oil) until well mixed. Shape into small burger patties.
Put olive oil in a large pan and heat over medium to medium-high heat (depending on your stove - mine needs medium-high to get going!). Cook for about 10 minutes on one side and 5 minutes on the other. The chickpea burgers should be lightly golden brown and crispy on the outside.
Serve with vegan gravy or on a burger bun with all the fixings.

DeletePerfect!! We were just talking about finding a recipe for our chickpeas (we got many many cans to make our own hummus, then got tired of eating massive amounts of hummus...sigh)
